Not just 'eating' - this is fully self-service: boil it yourself, flow it yourself, catch it yourself, and clean up yourself. Cold water pumped from underground of limestone mountains is tested annually as drinking water by Hiroshima Environmental Health Association. That water is used for the flowing somen. You boil and flow your own noodles. 9 of 12 sinks have hot water mixer faucets. There are 9 boiling stoves and 23 bamboo flumes. Noodles, dipping sauce, and wasabi are all provided, so you can come empty-handed.
